1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup crushed peppermint candies (plus extra for topping)

1 cup semi-sweet chocolate chips

½ cup white chocolate chips

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined. Set aside.

      Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

        Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.

          Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

            Fold in Peppermint: Gently fold in the crushed peppermint candies and semi-sweet chocolate chips.

              Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

                Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

                  Melt White Chocolate: While the cookies are cooling, melt the white chocolate chips in a microwave-safe bowl in 30-second increments, stirring in between, until smooth.

                    Drizzle White Chocolate: Once cookies are cooled completely, drizzle the melted white chocolate over the tops of the cookies using a fork or piping bag.

                      Garnish: Immediately sprinkle additional crushed peppermint candies over the melted white chocolate for that festive touch.
