2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

1 teaspoon vanilla extract

1 large egg

1/2 teaspoon peppermint extract

1/4 cup crushed peppermint candies (plus extra for topping)

1/4 cup red food coloring

1/4 cup white chocolate chips (optional)

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      Cream Butter & Sugar: In a large bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.

        Add Egg & Extracts: Add the egg, vanilla extract, and peppermint extract to the butter mixture and beat until combined.

          Combine Mixtures: Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.

            Separate & Color Dough: Divide the dough in half. In one half, add the red food coloring and mix until fully incorporated. In the other half, fold in the crushed peppermint candies and white chocolate chips if using.

              Swirl the Dough: Take a small portion of each colored dough and flatten them into circles. Layer them together (one red, one white) then roll them into a log. Twist the log gently to create the swirl effect.

                Slice Cookies: Slice the rolled dough into 1/4 inch thick cookies and place them on the prepared baking sheets, leaving some space between them.

                  Add Topping: Sprinkle the tops with extra crushed peppermint candies before baking.

                    Bake: Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, and that’s fine as they will continue to set while cooling.
