Ingredients

  • 4 boneless skinless chicken breasts specific ingredient for Perfectly Juicy Herb-Seasoned Chicken Breast pounded to an even thickness
  • 1 tablespoon fresh rosemary finely chopped
  • 1 tablespoon fresh thyme finely chopped
  • 1/2 teaspoon smoked paprika
  • 3 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons extra virgin olive oil
  • 1 lemon fresh lemon juice from about one lemon
  • salt and pepper to taste

Instructions

  • In a bowl, combine the minced garlic, chopped rosemary, chopped thyme, smoked paprika, lemon juice, olive oil, salt, and pepper to create the marinade.
  • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring each piece is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, up to 2 hours for best flavor.
  • Preheat your grill or a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off, and discard the remaining marinade.
  • Cook the chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Avoid flipping the chicken too often to achieve a nice sear.
  • Once cooked, remove the chicken from the heat and let it rest for about 5 minutes. This allows the juices to redistribute, ensuring the chicken remains juicy.
  • Slice the chicken breasts and serve warm, garnished with additional fresh herbs if desired.

Notes

Tip 1: For extra flavor, consider adding a tablespoon of Dijon mustard to the marinade.
Tip 2: Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
Variation: Try adding a tablespoon of honey for a sweet glaze or serve with a side of roasted vegetables.
