1 ½ cups graham cracker crumbs

½ cup unsweetened shredded coconut

½ cup melted butter

1 tablespoon sugar

2 cups fresh blueberries (or frozen, thawed)

1/3 cup sugar (for blueberries)

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 cup coconut cream

2 tablespoons powdered sugar

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, shredded coconut, melted butter, and sugar. Mix until well combined. Press the mixture firmly into a 9-inch tart pan to form the crust. Bake for 10 minutes or until golden. Let it cool.

    Prepare the Blueberry Filling: In a medium saucepan, combine the blueberries, sugar, cornstarch, and vanilla extract over medium heat. Cook while gently stirring until the mixture bubbles and thickens, about 5-7 minutes. Remove from heat and let it cool slightly.

      Assemble the Tart: Pour the cooled blueberry mixture into the cooled crust, spreading it evenly.

        Make the Coconut Cream Topping: In a bowl, whip the coconut cream and powdered sugar together until smooth and creamy. Spread it evenly over the blueberry filling.
