Ingredients

1 cup fresh pineapple juice

1/2 cup fresh blueberries (plus extra for garnish)

1/4 cup lime juice (freshly squeezed)

1/4 cup agave syrup (or honey)

1 cup sparkling water or club soda

1 tablespoon lime zest

Ice cubes

Fresh mint leaves (for garnish)

Lime slices (for garnish)

Instructions

In a blender, combine the fresh pineapple juice, blueberries, and lime juice. Blend until smooth.

Strain the mixture through a fine mesh sieve into a large pitcher to remove any solids, pressing the mixture to extract as much juice as possible.

Stir in the agave syrup and lime zest until fully incorporated.

When ready to serve, fill glassware with ice cubes.

Pour the pineapple-blueberry mixture over the ice, filling each glass about two-thirds of the way.

Top each drink with sparkling water or club soda for a bubbly finish.

Garnish with a few fresh blueberries, a sprig of mint, and a slice of lime on the rim of the glass.

Serve immediately and enjoy the refreshing flavors!
