2 cups jasmine rice

1 lb boneless chicken thighs (cut into bite-sized pieces)

1 cup fresh pineapple (diced)

1/4 cup soy sauce

1/4 cup honey

1 tablespoon sesame oil

1 tablespoon ginger (minced)

2 cloves garlic (minced)

1 red bell pepper (sliced)

1 cup snap peas

1/4 cup green onions (sliced, for garnish)

Salt and pepper to taste

1 tablespoon vegetable oil

Instructions
 

Cook the Rice: In a saucepan, bring 4 cups of water to a boil. Add jasmine rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

    Prepare the Chicken Marinade: In a bowl, combine soy sauce, honey, sesame oil, minced ginger, and minced garlic. Add the chicken pieces, tossing to coat thoroughly. Let marinate for at least 20 minutes.

      Stir-Fry the Vegetables: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced red bell pepper and snap peas. Stir-fry for about 3-5 minutes until vegetables are tender-crisp. Remove from pan and set aside.

        Cook the Chicken: In the same skillet, add the marinated chicken along with any remaining marinade. Stir-fry over medium-high heat for 5-7 minutes, or until the chicken is cooked through and lightly caramelized.

          Add Pineapple: Toss in the diced pineapple and cooked vegetables to the chicken. Stir-fry for an additional 2-3 minutes, allowing the flavors to meld together.

            Combine with Rice: Add the cooked jasmine rice to the skillet, stirring to combine all ingredients evenly. Allow to heat through for another minute. Season with salt and pepper to taste.
