1 lb boneless, skinless chicken thighs

1 cup fresh pineapple, diced

1 red bell pepper, thinly sliced

1 small red onion, thinly sliced

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

8 small corn tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, honey, cumin, chili powder, garlic, salt, and black pepper. Add the chicken thighs, ensuring they are well-coated. Cover and marinate in the fridge for at least 30 minutes or up to 2 hours for enhanced flavor.

    Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the red bell pepper and onion. Sauté for about 5-7 minutes until they are tender and slightly caramelized. Remove from the skillet and set aside.

      Cook the Chicken: In the same skillet, add the marinated chicken thighs. Cook for about 6-7 minutes on each side or until fully cooked and golden brown. Make sure the internal temperature reaches 165°F (75°C).

        Add Pineapple: Once the chicken is cooked, add the diced pineapple to the skillet and cook for another 2-3 minutes until the pineapple is heated through and slightly caramelized.

          Prepare the Tacos: Remove the chicken from the skillet and let it rest for a few minutes. Slice it into strips. Warm the corn tortillas in a dry skillet or microwave for a few seconds until pliable.

            Assemble the Tacos: On each tortilla, layer the sliced chicken, sautéed vegetables, and add fresh cilantro on top. Squeeze fresh lime juice over the tacos for an added zing.
