Pineapple Chicken with Rice

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple, diced (or canned, drained)

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

2 teaspoons cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon ginger, minced

1 cup chicken broth

1 teaspoon sesame oil

2 cups cooked jasmine rice

Salt and pepper to taste

Chopped green onions and sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken pieces with soy sauce, hoisin sauce, rice vinegar, and cornstarch. Mix well to coat the chicken evenly. Let it marinate for at least 20 minutes while you prepare the other ingredients.

    Sauté Vegetables: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chopped onion, garlic, ginger, and both sliced bell peppers. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp. Remove the mixture from the skillet and set aside.

      Cook the Chicken: In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, add the marinated chicken. Cook for 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through.

        Combine Ingredients: Return the sautéed vegetables to the skillet with the chicken. Add the diced pineapple and the chicken broth. Stir well and bring to a gentle simmer. Let it cook for another 5 minutes, allowing the flavors to meld.

          Finish & Serve: Drizzle with sesame oil, and season with salt and pepper to taste. Serve the Pineapple Chicken over the cooked jasmine rice. Garnish with chopped green onions and sesame seeds for an extra touch.
