Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Prepare the Cake Batter:

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add in the eggs, one at a time, mixing well after each addition.

          - Stir in the crushed pineapple and vanilla extract until well combined.

            Combine Dry Ingredients:

              - In another bowl, whisk together the flour, baking powder, and salt.

                - Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

                  - Fold in the unsweetened coconut flakes gently until distributed throughout the batter.

                    Bake:

                      - Pour the batter evenly into the prepared cake pans.

                        - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                          - Once baked, remove from the oven and allow to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

                            Make the Frosting:

                              - In a large bowl, beat the coconut cream and vanilla extract together.

                                - Gradually add powdered sugar, one cup at a time, mixing thoroughly.

                                  - Add milk to reach the desired spreading consistency.

                                    Assemble the Cake:

                                      - Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of frosting on top.

                                        - Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

                                          Decorate:

                                            - Sprinkle extra coconut flakes over the frosted cake for decoration.

                                              - Optionally, add fresh pineapple slices and toasted coconut flakes on top for a tropical touch!
