1 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup sweetened condensed milk

2 large eggs

1 tsp vanilla extract

1 cup crushed pineapple, well-drained

1/2 cup shredded coconut (optional)

1 tsp lemon zest

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Condensed Milk: In a large mixing bowl, beat the softened butter with a hand mixer or stand mixer on medium speed until creamy. Gradually add the sweetened condensed milk, mixing until light and fluffy.

        Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract and lemon zest. Mix until combined.

          Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture, mixing until just combined. Do not overmix.

            Fold in Pineapple and Coconut: Gently fold in the crushed pineapple and shredded coconut (if using) until evenly distributed throughout the batter.

              Pour into Pan: Pour the batter into the prepared cake pan, spreading it evenly.

                Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool the Cake: Remove from the oven and allow the cake to cool in the pan for 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
