1 large ripe pineapple, peeled, cored, and cut into bite-sized chunks

1 cup all-purpose flour

1/2 cup cornstarch

1 tablespoon baking powder

1/4 teaspoon salt

1 tablespoon sugar

1/2 teaspoon ground cinnamon (optional)

1 large egg

3/4 cup coconut milk (or regular milk)

1 teaspoon vanilla extract

Oil for frying (such as vegetable or coconut oil)

Powdered sugar, for dusting

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Pineapple: Place the pineapple chunks on a paper towel and pat them dry to remove excess moisture. This will help the batter stick and prevent the fritters from becoming soggy.

    Make the Batter: In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, sugar, and ground cinnamon (if using). Whisk the dry ingredients together until well combined.

      Combine Wet Ingredients: In another bowl, beat the egg and then add the coconut milk and vanilla extract. Whisk until smooth.

        Mix It All Together: Pour the wet mixture into the dry ingredients and stir gently until just combined. It’s okay if there are a few lumps; do not over-mix. Gently fold in the pineapple chunks until they are coated with the batter.

          Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of oil over medium heat. You can test if the oil is hot enough by dropping a small spoonful of batter into the oil — it should sizzle and rise to the top.

            Fry the Fritters: Using a spoon or a small ice cream scoop, carefully drop batter-coated pineapple chunks into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

              Drain: Use a slotted spoon to transfer the fritters to a plate lined with paper towels to drain excess oil.
