For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup crushed pineapple, drained (reserve juice)

1 cup buttermilk

3 large eggs

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon vanilla extract

½ teaspoon salt

For the Pineapple Whipped Cream:

1 cup heavy whipping cream

½ cup powdered sugar

½ teaspoon vanilla extract

¼ cup crushed pineapple (well-drained)

For the Topping:

Fresh pineapple slices (for decoration)

Toasted coconut flakes (optional)

Maraschino cherries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

      Combine Wet and Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the butter-sugar mixture, alternating with the buttermilk. Begin and end with the flour mixture. Fold in the crushed pineapple and the reserved juice until just combined.

        Bake the Cake: Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

          Prepare the Pineapple Whipped Cream: In a medium bowl, beat the heavy whipping cream until soft peaks form. Gradually add in the powdered sugar and vanilla extract, continuing to beat until stiff peaks form. Gently fold in the crushed pineapple.

            Assemble the Cake: Once cooled, place one layer of cake on a serving platter. Spread half of the pineapple whipped cream over the top. Place the second layer of cake on top and frost the top and sides with the remaining whipped cream.

              Decorate: Garnish with fresh pineapple slices, toasted coconut flakes, and maraschino cherries if desired.

                Chill & Serve: Refrigerate the cake for about 30 minutes before slicing to help the whipped cream set. Slice and enjoy the heavenly taste of pineapple paradise!
