Ingredients

2 cups fresh pineapple, chopped

1 cup freshly squeezed lemon juice (about 4-5 lemons)

1 cup sugar (adjust based on sweetness preference)

4 cups cold water

1 can (12 oz) lemon-lime soda (or sparkling water for a lighter option)

Fresh mint leaves for garnish

Ice cubes

Instructions

In a blender, combine the chopped pineapple and half of the cold water (2 cups). Blend until smooth.

Strain the pineapple puree through a fine-mesh sieve into a large pitcher to remove any pulp, pressing down with a spoon to extract as much juice as possible.

Add the freshly squeezed lemon juice and sugar to the pitcher. Stir until the sugar has completely dissolved.

Pour in the remaining cold water and stir to combine.

Just before serving, slowly add the lemon-lime soda or sparkling water to the punch for a fizzy finish.

To serve, fill glasses with ice cubes and pour the pineapple lemonade punch over the ice.

Garnish with fresh mint leaves and a slice of lemon or pineapple if desired.
