Ingredients
  

  • 2 cups fresh pineapple chunks use ripe pineapple for sweetness
  • 1 cup fresh mint leaves lightly packed
  • 1 cup coconut water for a tropical flavor
  • 1 tablespoon lime juice freshly squeezed
  • 2 tablespoons agave syrup adjust based on sweetness preference
  • 2 cups sparkling water for fizz
  • 1/2 teaspoon sea salt to enhance flavors
  • ice cubes for serving

Instructions
 

  • In a blender, combine the fresh pineapple chunks, fresh mint leaves, lime juice, and agave syrup. Blend until smooth and well combined.
  • Strain the blended mixture through a fine mesh sieve into a large pitcher to remove any pulp, pressing down to extract as much liquid as possible.
  • Add the coconut water and sea salt to the strained pineapple-mint mixture. Stir well to combine all the flavors.
  • Chill the mixture in the refrigerator for at least 15 minutes to ensure it is nice and cold.
  • To serve, fill glasses with ice cubes and pour the chilled pineapple-mint mixture, leaving some space at the top.
  • Top each glass with sparkling water to add fizz and garnish with additional mint leaves or pineapple slices if desired.

Notes

Tip 1: For an extra refreshing twist, add a few slices of cucumber to the mocktail.
Tip 2: This drink can be made ahead; just mix the base and add sparkling water before serving.
Variation: Swap coconut water with ginger ale for a spicier flavor.
