Ingredients
  

For the Cake:

1 cup shelled pistachios (lightly toasted)

1 cups all-purpose flour

1 tsp baking powder

tsp baking soda

tsp salt

cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup buttermilk

For the Cream Cheese Frosting:

8 oz cream cheese, softened

cup unsalted butter, softened

3-4 cups powdered sugar (adjust for sweetness and consistency)

1 tsp vanilla extract

2 tbsp heavy cream (optional for a lighter consistency)

Instructions
 

Prepare the Pistachios:

    - Roughly chop toasted pistachios and set them aside for the cake batter and decoration.

      Preheat the Oven:

        - Preheat your oven to 350F (175C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

          Mix Dry Ingredients:

            - In a mixing bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

              Cream the Butter and Sugar:

                - In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.

                  Add Eggs and Vanilla:

                    - Incorporate the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.

                      Combine Dry Ingredients and Buttermilk:

                        - Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Start with the flour mixture and begin and end with the flour. Mix until just combined.

                          Fold in Pistachios:

                            - Gently fold in the chopped pistachios until evenly distributed in the batter.

                              Bake the Cake:

                                - Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

                                  Prepare the Cream Cheese Frosting:

                                    - In a medium bowl, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, mixing until well combined. Add the vanilla extract and mix. If desired, add heavy cream to reach your desired frosting consistency.
