Ingredients
  

  • 4 large egg whites at room temperature
  • 1 cup granulated sugar divided
  • 1/4 teaspoon cream of tartar to stabilize meringue
  • 1 teaspoon vanilla extract for flavor
  • 1 cup pistachio paste can be homemade or store-bought
  • 1/2 cup heavy cream cold for whipping
  • 1 tablespoon powdered sugar for sweetening cream
  • 1 tablespoon unsalted butter softened for cream
  • 1/2 cup chopped pistachios for garnish
  • 1 tablespoon water to make a syrup

Instructions
 

  • Preheat the oven to 200°F (95°C) and line two baking sheets with parchment paper. Use a pencil to draw tree shapes on the parchment, then flip it over so the pencil side is down.
  • In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy. Stir in the vanilla extract.
  • Transfer the meringue to a piping bag fitted with a star tip. Pipe the meringue onto the parchment in the shape of the tree, starting from the base and working upwards. Create layers for added texture.
  • Bake the meringue for 1 hour or until it is dry to the touch. Turn off the oven and leave the meringue inside to cool completely.
  • In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Gently fold in the pistachio paste and softened butter until well combined.
  • Once the meringue is cool, carefully peel it off the parchment. Layer the meringue pieces with the pistachio cream in between each layer, creating a tree structure.
  • Garnish the top with chopped pistachios and any leftover cream. Serve immediately or refrigerate for up to 2 hours before serving.
