Ingredients

8 oz Brie cheese (round)

1 cup shelled pistachios, finely chopped

2 tablespoons brown sugar

1 teaspoon sea salt

1 tablespoon olive oil

1 teaspoon fresh rosemary, chopped (optional)

Crackers or sliced baguette, for serving

Honey or balsamic glaze, for drizzling (optional)

Instructions

Preheat your oven to 350°F (175°C).

On a cutting board, unwrap the Brie cheese and slice it into 1-inch thick rounds.

In a medium bowl, mix the finely chopped pistachios, brown sugar, sea salt, olive oil, and chopped rosemary until well combined.

Lay the Brie rounds on a parchment-lined baking sheet.

Spoon the pistachio mixture generously on top of each Brie round, pressing it down lightly to adhere.

Bake in the preheated oven for about 10-12 minutes, or until the cheese is softened and the topping is golden brown.

Once baked, remove the Brie rounds from the oven and let them cool for a couple of minutes.

Drizzle with honey or balsamic glaze if desired, then serve warm with crackers or sliced baguette.
