Ingredients

1 lb pork belly, skin-on and cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon Sriracha (adjust to taste)

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon sesame oil

1 teaspoon five-spice powder

1/4 cup green onions, sliced

1/4 cup fresh cilantro, chopped

1 head of butter lettuce, leaves separated and washed

1 cup shredded carrots

1 red bell pepper, thinly sliced

Lime wedges, for serving

Salt and pepper to taste

Instructions

Marinate the Pork Belly: In a large bowl, combine soy sauce, hoisin sauce, honey, rice vinegar, Sriracha, minced garlic, grated ginger, sesame oil, five-spice powder, salt, and pepper. Toss the pork belly cubes in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, preferably 2-3 hours for better flavor.

Cook the Pork Belly: Preheat a grill or stovetop pan over medium-high heat. Remove the pork belly from the marinade (reserve the marinade) and place it in the pan. Cook for about 10-12 minutes, turning occasionally until the pork belly is crispy and browned.

Reduce the Marinade: While the pork belly cooks, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for about 5-7 minutes, or until it thickens slightly.

Prepare the Lettuce Wraps: Arrange the butter lettuce leaves on a serving platter. Once the pork belly is cooked, remove it from the heat and let it rest for a few minutes.

Assemble the Wraps: Place a few pieces of the crispy pork belly in the center of each lettuce leaf. Top with shredded carrots, sliced bell pepper, green onions, and cilantro. Drizzle with the thickened marinade for added flavor.

Serve and Enjoy: Squeeze fresh lime juice over the assembled wraps, and serve immediately. Enjoy your Sweet & Spicy Pork Belly Lettuce Wraps with friends and family!
