4 boneless pork chops (1-inch thick)

1 cup fresh pineapple, diced

1/4 cup brown sugar

1/4 cup soy sauce

2 tablespoons apple cider vinegar

2 tablespoons vegetable oil

2 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon red pepper flakes (adjust for spice level)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Marinate the Pork Chops: In a medium bowl, combine brown sugar, soy sauce, apple cider vinegar, minced garlic, ginger, and red pepper flakes. Mix well until the sugar is dissolved. Add the pork chops and ensure they are coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Pineapple Glaze: In a small saucepan, heat the vegetable oil over medium heat. Add the diced pineapple and sauté for about 5 minutes until it's slightly caramelized. Pour in the remaining marinade from the pork chops (reserving the pork) and boil for an additional 3-4 minutes until it thickens slightly. Remove from heat and set aside.

      Cook the Pork Chops: Preheat your grill or a grill pan over medium-high heat. Remove the pork chops from the marinade and season with salt and pepper. Grill for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C) and the meat is caramelized and cooked through.
