4 large russet potatoes

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup sour cream

1/4 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup cooked bacon bits (optional)

1/2 cup panko breadcrumbs

Olive oil for drizzling

Prepare the Potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water and pat them dry. Prick the skins with a fork multiple times to make them steam and cook evenly. Place them on a baking sheet and bake for about 45 minutes or until tender when pierced with a fork.

    Cool & Scoop: Once the potatoes are cooked, remove them from the oven and let them cool for about 15-20 minutes. After cooling, carefully slice each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch of potato inside for structure.

      Make the Filling: In a mixing bowl, combine the scooped potato flesh, cheddar cheese, cream cheese, sour cream, green onions, garlic powder, onion powder, bacon bits (if using), salt, and pepper. Mash everything together until creamy and well combined.

        Fill the Skins: Preheat the oven to 425°F (220°C). Spoon the potato mixture back into each potato skin half. Press the filling down gently to pack it tightly.

          Add Crush & Bake: Sprinkle panko breadcrumbs evenly over the tops of the filled potato skins for added crunch. Drizzle a little olive oil over the breadcrumbs for extra crispiness. Place the filled potato skins back onto the baking sheet.

            Final Bake: Bake in the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the breadcrumbs are golden and crispy.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with additional green onions if desired. Serve warm and enjoy your delicious crispy cheesy potato skin bites!
