Ingredients
  

1 pound ground turkey

2 medium potatoes, diced (about 2 cups)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 large onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (28 oz) crushed tomatoes

2 cups chicken broth

1 tablespoon olive oil

1 tablespoon chili powder

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro

Instructions
 

Sauté the Turkey: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a wooden spoon as it cooks (about 5-7 minutes). Season with salt, pepper, and half of the chili powder and cumin.

    Add Vegetables: Stir in the chopped onion, bell pepper, and minced garlic. Cook until the onions are translucent (about 2-3 minutes).

      Incorporate the Potatoes: Add the diced potatoes to the pot, stirring well to coat them with the mixture.

        Pour in the Tomatoes and Broth: Add the crushed tomatoes, chicken broth, kidney beans, black beans, remaining chili powder, cumin, smoked paprika, and any additional seasoning you desire. Stir well to combine all ingredients.

          Simmer: Bring the chili to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, or until the potatoes are tender and the flavors have melded together.

            Taste and Adjust: After simmering, taste the chili and adjust the seasoning with more salt, pepper, or spices according to your preference.

              Serve: Ladle the chili into bowls and add your favorite toppings like shredded cheese, sour cream, diced avocado, or fresh cilantro.
