1 package of frozen potstickers (about 20 pieces)

4 cups chicken or vegetable broth

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon ginger, minced

3 cloves garlic, minced

1 cup bok choy, chopped

1 carrot, thinly sliced

1 cup mushrooms, sliced (shiitake or button)

2 green onions, chopped (for garnish)

1 tablespoon fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Chili oil (optional, for spice)

Instructions
 

In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.

    Pour in the chicken or vegetable broth and bring to a gentle simmer.

      Stir in the soy sauce, followed by the sliced carrots and mushrooms. Let them cook for about 5 minutes until slightly softened.

        Add the chopped bok choy to the pot and simmer for another 2-3 minutes, allowing it to wilt.

          Gently add the frozen potstickers to the simmering broth. Let them cook for about 6-8 minutes, or until they are heated through and floating.

            Taste the soup and season with salt and pepper as needed. For a spicy kick, drizzle some chili oil on top.
