1 cup almond flour

1/2 cup rolled oats

1/2 cup protein powder (vanilla or chocolate)

1/3 cup coconut sugar or brown sugar

1/2 tsp baking soda

1/4 tsp sea salt

1/2 cup natural peanut butter (smooth or crunchy)

1/4 cup honey or maple syrup

1 large egg

1 tsp vanilla extract

1/2 cup dark chocolate chips

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the almond flour, rolled oats, protein powder, coconut sugar, baking soda, and sea salt. Whisk together until fully mixed.

      In a separate bowl, combine the peanut butter, honey (or maple syrup), egg, and vanilla extract. Mix until smooth and well combined.

        Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over-mix.

          Fold in the dark chocolate chips and walnuts or pecans if using.

            Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Flatten each cookie slightly with the back of a fork or your palm.

                Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

                  Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
