1/2 cup almond flour

1/2 cup vanilla protein powder

1/4 cup natural peanut butter (or any nut butter of your choice)

1/2 cup Greek yogurt (plain or vanilla)

1/3 cup honey or maple syrup

1/4 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (optional, for added richness)

1/4 cup chopped nuts (walnuts or almonds, optional)

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large bowl, whisk together the rolled oats, almond flour, protein powder, salt, and baking soda until well combined.

      Combine Wet Ingredients: In another bowl, combine the peanut butter, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and creamy.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir until everything is evenly combined. If you’re adding chocolate chips or nuts, fold them in now.

          Shape the Cookies: Using a tablespoon or a cookie scoop, drop rounded spoonfuls of the mixture onto the prepared baking sheet, leaving some space between each cookie as they will spread a little while baking.

            Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until they are lightly golden around the edges. The centers might look a bit soft, but they will firm up as they cool.

              Cool: Remove from the oven and allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
