Ingredients
  

1 cup rolled oats

1 ripe banana

2 large eggs

1 tablespoon vanilla extract

1 tablespoon baking powder

1/2 cup cottage cheese (or Greek yogurt)

1/4 teaspoon salt

1/2 cup milk (dairy or non-dairy)

Optional add-ins: blueberries, chocolate chips, or nuts

Instructions
 

In a blender, combine the rolled oats, banana, eggs, cottage cheese, vanilla extract, baking powder, salt, and milk. Blend until smooth and creamy.

    Allow the batter to rest for about 5 minutes to thicken slightly.

      Heat a nonstick skillet or griddle over medium heat and lightly grease it with cooking spray or a bit of butter.

        Pour 1/4 cup of the pancake batter onto the skillet for each pancake. If desired, sprinkle with optional add-ins like blueberries or chocolate chips.

          Cook for 2-3 minutes until bubbles form on the surface and the edges look set. Flip and cook for an additional 1-2 minutes until golden brown.

            Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.

              Serve warm with your choice of toppings such as maple syrup, yogurt, or fresh fruit.
