Ingredients
  

  • 1 sheet puff pastry thawed
  • 1 cup fresh mozzarella balls bocconcini, halved
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh basil leaves torn
  • 1 tablespoon balsamic glaze for drizzling
  • 1 large egg beaten, for egg wash
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for drizzling on tomatoes

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the thawed puff pastry sheet on a lightly floured surface to smoothen it and cut it into 2-inch squares.
  • Place a half mozzarella ball, a half cherry tomato, and a few torn basil leaves in the center of each puff pastry square. Season with salt and pepper.
  • Fold the corners of the pastry squares over the filling to create a pocket, sealing the edges with a fork. Brush the tops with the beaten egg for a golden finish.
  • Drizzle the filled pockets with olive oil and place them on the prepared baking sheet. Bake for 20-25 minutes or until puffed and golden brown.
  • Once baked, remove from the oven and let cool slightly. Drizzle with balsamic glaze before serving.
