Puff Pastry Trees with Burrata & Cranberry Glaze

1 sheet of puff pastry (thawed if frozen)

1 cup burrata cheese

1 cup fresh cranberries (or cranberry sauce)

1/4 cup sugar (for cranberry glaze)

1 tablespoon balsamic vinegar

1 egg (beaten, for egg wash)

Fresh rosemary sprigs (for garnish)

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Cranberry Glaze: In a small saucepan, combine the fresh cranberries and sugar over medium heat. Add 1/4 cup of water and cook until the cranberries burst and form a thick sauce (about 10 minutes). Stir in the balsamic vinegar and season with salt and pepper to taste. Remove from heat and allow to cool slightly.

      Shape the Puff Pastry: On a floured surface, roll out the puff pastry into a rectangle. Cut the pastry into tree shapes using a sharp knife or a cookie cutter. You can make them as big or small as you like. Remember to make a few different sizes for a more natural tree look.

        Assemble the Trees: On the prepared baking sheet, place the cut-out puff pastry trees. Carefully create layers by cutting slits in the branches of each 'tree' while leaving the trunk intact for structure. Gently pull the branches apart to create a tree shape.

          Add Burrata: Spoon burrata cheese onto the base of each tree shape. This will provide a creamy, delicious filling.

            Egg Wash: Brush the edges of the puff pastry with the beaten egg to give them a beautiful golden color when baked.

              Bake: Place the puff pastry trees in the preheated oven and bake for 15-20 minutes, or until golden brown and puffed up.

                Plate & Glaze: Once baked, remove the puff pastry trees from the oven and allow them to cool slightly. Drizzle the cranberry glaze over the top of each tree, allowing it to cascade down the branches.

                  Garnish: Finish with fresh rosemary sprigs as ornaments or decorations, if desired.
