2 large chicken breasts

1 cup barbecue sauce (your choice)

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

4 burger buns

1 cup coleslaw (store-bought or homemade)

Sliced pickles (optional)

Sliced jalapeños (optional)

Olive oil for cooking

Instructions
 

Cook the Chicken: In a large skillet, heat a drizzle of olive oil over medium heat. Season the chicken breasts with smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper. Sear the chicken for about 5-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove from heat and let rest for a few minutes.

    Shred the Chicken: Once the chicken is cool enough to handle, use two forks to shred the chicken into bite-sized pieces.

      Mix with Barbecue Sauce: In a large bowl, combine the shredded chicken with barbecue sauce. Mix well until the chicken is fully coated with the sauce.

        Toast Burger Buns: In the same skillet, add a little more olive oil if needed and toast the burger buns on the cut side until golden brown.

          Assemble the Burgers: On the bottom half of each toasted bun, place a generous portion of the pulled chicken mixture. Top with coleslaw, sliced pickles, and jalapeños, if using. Finally, place the top half of the bun on each burger.

            Serve: Serve the burgers warm with your favorite sides, such as sweet potato fries or a fresh salad.
