3/4 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

3 large eggs

1 cup granulated sugar

1 cup canned pumpkin puree

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 cup caramel sauce (divided)

1/2 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon milk

1/2 teaspoon ground cinnamon (for glaze)

Instructions
 

Preheat your oven to 375°F (190°C). Line a 15x10 inch jelly roll pan with parchment paper and lightly grease it.

    In a medium bowl, whisk together the flour, baking powder, baking soda, spices (cinnamon, nutmeg, ginger), and salt. Set aside.

      In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale, about 3-4 minutes.

        Mix in the pumpkin puree, vegetable oil, and vanilla extract until well combined.

          Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.

            Pour the batter into the prepared pan, spreading it evenly.

              Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.

                Remove from the oven and immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper.

                  Starting from one edge, roll the cake tightly with the towel inside. Allow it to cool completely while rolled up.

                    Once cooled, carefully unroll the cake and spread a layer of cream cheese frosting (made by mixing softened cream cheese, powdered sugar, and milk until smooth) evenly over the surface. Drizzle half of the caramel sauce on top.

                      Roll the cake back up without the towel and place it seam-side down on a serving platter.

                        Drizzle the remaining caramel sauce over the top of the cake roll.

                          For the glaze, mix powdered sugar, milk, and cinnamon together until smooth. Drizzle over the cake roll before serving.
