Ingredients
  

2 cups pumpkin puree (canned or fresh)

1/2 cup warm milk (110°F)

1/4 cup unsalted butter, melted

1/4 cup sugar

1 large egg

2 teaspoons instant yeast

3 to 4 cups all-purpose flour

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

1 egg (for egg wash)

Sea salt (for sprinkling)

Instructions
 

Prepare the Dough: In a large bowl, mix warm milk, melted butter, and sugar until well combined. Add the pumpkin puree and egg, whisking until smooth. Sprinkle instant yeast over the mixture and let it sit for about 5 minutes until frothy.

    Combine Dry Ingredients: In another bowl, whisk together 3 cups of flour, salt, cinnamon, nutmeg, ginger, and cloves. Gradually incorporate the dry ingredients into the wet mixture until a shaggy dough forms.

      Knead the Dough: Transfer the dough onto a floured surface. Knead for about 8–10 minutes, adding more flour as necessary, until smooth and elastic. The dough should be slightly sticky but manageable.

        First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1–2 hours, or until doubled in size.

          Shape the Rolls: Once risen, punch down the dough and divide it into about 12 equal pieces. Shape each piece into a round ball and place them in a greased 9x13-inch baking dish or on a parchment-lined baking sheet.

            Second Rise: Cover the rolls with a cloth and let them rise again for about 30–45 minutes, until they have puffed up.

              Preheat Oven: Preheat your oven to 350°F (175°C).

                Egg Wash: In a small bowl, beat the remaining egg and brush the mixture over the tops of the rolls. Sprinkle lightly with sea salt for added flavor.

                  Bake: Bake the rolls in the preheated oven for 25–30 minutes, or until golden brown and cooked through. A toothpick inserted into the center should come out clean.

                    Cool and Serve: Allow the rolls to cool in the pan for about 10 minutes before transferring them to a wire rack. Serve warm, smothered with butter or your favorite spread.
