8 oz (225g) fettuccine or linguine pasta

2 boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

½ cup chicken broth

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and pepper to taste

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or linguine and cook according to package instructions until al dente. Drain and set aside.

    Season Chicken: While the pasta cooks, in a bowl, toss the sliced chicken breasts with Cajun seasoning until evenly coated.

      Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, turning occasionally, until golden and cooked through. Remove the chicken from the skillet and set it aside.

        Sauté Aromatics: In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Then add the minced garlic and sauté for an additional minute until fragrant.

          Make Sauce: Pour the heavy cream and chicken broth into the skillet, stirring well to combine. Bring to a gentle simmer, then add the cherry tomatoes and fresh spinach. Cook for about 2-3 minutes until the spinach has wilted and the tomatoes are softened.

            Combine Ingredients: Return the cooked chicken to the skillet, then add the drained pasta. Toss everything together until the pasta is coated in the creamy sauce. Season with salt and pepper to taste.
