Ingredients
  

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (10 oz) diced tomatoes with green chilies

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

8 small flour tortillas

1 can (10 oz) enchilada sauce

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart as it cooks. Drain excess fat.

      Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onion is translucent, about 3-4 minutes.

        Add Flavor: Stir in the diced tomatoes, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes to blend the flavors.

          Fill Tortillas: On a flat surface, place a tortilla and spoon about 2-3 tablespoons of the beef mixture in the center. Sprinkle with a tablespoon of cheddar and Monterey Jack cheese. Roll up the tortilla tightly and place it seam-side down in a greased 9x13 inch baking dish. Repeat with remaining tortillas and filling.

            Add Sauce & Cheese: Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining cheese on top.

              Bake: Cover the dish with foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and lightly golden.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro and serve hot with a dollop of sour cream on top.
