Ingredients

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

Zest of 1 lemon

1 teaspoon lemon juice

1/2 cup crushed graham crackers (for garnish)

Fresh mint leaves (for garnish)

Instructions

In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat and let sit for about 15 minutes to macerate, allowing the strawberries to release their natural juices.

While the strawberries are marinating, prepare the whipped cream. In a large mixing bowl, combine the heavy whipping cream, powdered sugar, vanilla extract, and lemon zest. Using an electric mixer, whip on medium-high speed until stiff peaks form.

Once the strawberries are ready, gently fold them into the whipped cream mixture until just combined. Be careful not to overmix; you want to maintain some of the beautiful strawberry color.

To assemble the dessert, take serving glasses or bowls and layer the strawberry whipped cream mixture with crushed graham crackers. Start with a layer of the cream, followed by a layer of crushed graham crackers, and repeat until the glasses are filled.

Top with additional sliced strawberries, a sprinkle of crushed graham crackers, and a sprig of fresh mint for decoration.

Chill the assembled dessert in the refrigerator for at least 30 minutes before serving, allowing the flavors to meld together.
