1.5 lbs chicken thighs, boneless and skinless

2 cups jasmine rice, rinsed

4 cups chicken broth

1 medium onion, diced

4 cloves garlic, minced

1 tablespoon ginger, minced

1 tablespoon soy sauce

2 tablespoons sriracha (adjust to taste)

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup frozen peas

1 tablespoon sesame oil

Chopped green onions and sesame seeds for garnish

Instructions
 

Sauté Aromatics: Turn on the Instant Pot and select the Sauté function. Add olive oil, followed by the diced onion, and sauté until translucent, about 3-4 minutes.

    Add Garlic & Ginger: Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

      Brown the Chicken: Add the chicken thighs to the pot, followed by paprika, salt, and pepper. Cook for about 5 minutes, stirring occasionally, until lightly browned on all sides.

        Combine Rice & Liquids: Stir in the rinsed jasmine rice, followed by the chicken broth, soy sauce, and sriracha. Make sure the rice is mostly submerged in the liquid.

          Pressure Cook: Close the lid of the Instant Pot and set the steam release valve to Sealing. Select the Manual or Pressure Cook setting, set the timer for 8 minutes on high pressure.

            Natural Release: Once the cooking time is complete, allow the pressure to naturally release for 10 minutes, then carefully switch the valve to Venting to release any remaining steam.

              Finish Dish: Open the lid and stir in the frozen peas and sesame oil, letting it sit for a minute to warm through. Gently fluff the rice and chicken mixture with a fork.
