Ingredients

4 ripe peaches, peeled and sliced

1 cup heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Instructions

In a blender or food processor, combine the sliced peaches, lemon juice, and 1/4 cup of the sugar. Puree until smooth. You can leave some small bits of peach for texture if desired.

In a mixing bowl, whisk together the heavy cream, whole milk, remaining sugar, vanilla extract, and a pinch of salt until the sugar is dissolved.

Gently fold the peach puree into the cream mixture until well combined. Ensure not to over-mix, as you want to keep a nice peachy flavor.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes) until it reaches a soft-serve consistency.

Transfer the soft ice cream to an airtight container and freeze for at least 2 hours to firm up.

Before serving, let the ice cream sit at room temperature for a few minutes for easier scooping.
