1.5 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)

1/4 cup olive oil

3 tablespoons fresh lemon juice

2 teaspoons lemon zest

2 cloves garlic (minced)

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 red bell pepper (cut into 1-inch squares)

1 yellow bell pepper (cut into 1-inch squares)

1 red onion (cut into 1-inch squares)

Fresh parsley (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, smoked paprika, salt, and pepper. Add the cubed chicken to the marinade. Toss to coat well. Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Skewers: If using wooden skewers, soak them in water for about 20-30 minutes to prevent burning. Preheat your grill or grill pan over medium-high heat.

      Assemble the Skewers: Thread the marinated chicken cubes onto the skewers, alternating with pieces of red bell pepper, yellow bell pepper, and red onion.

        Grill the Skewers: Place the skewers on the hot grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).

          Serve: Remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh parsley before serving.
