1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Juice of 1 lemon

Zest of 1 lemon

1 teaspoon dried oregano

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded cabbage

½ cup diced tomatoes

¼ cup fresh cilantro, chopped

1 avocado, sliced

Lime wedges for serving

Instructions
 

In a large bowl, combine the shrimp, olive oil, garlic, smoked paprika, cumin, lemon juice, lemon zest, oregano, salt, and pepper. Toss well to coat the shrimp evenly. Let marinate for about 15 minutes.

    Heat a large skillet over medium-high heat. Once hot, add the shrimp along with the marinade. Cook for about 2-3 minutes on each side, or until shrimp are pink and opaque.

      While the shrimp are cooking, warm the tortillas in a separate pan or microwave.

        Assemble the tacos by placing a generous portion of shrimp on each tortilla. Top with shredded cabbage, diced tomatoes, fresh cilantro, and avocado slices.

          Serve with lime wedges on the side for added zest.
