Ingredients
  

  • 1.5 pounds chicken breast cut into bite-sized pieces
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup broccoli florets fresh or frozen
  • 2 tablespoons olive oil for cooking
  • 3 cloves garlic minced

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add the chicken pieces and cook until browned, about 5-7 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the bell pepper, zucchini, and broccoli to the skillet, stirring to combine.
  • Cook for another 10-15 minutes, stirring occasionally, until the vegetables are tender and the chicken is cooked through.

Notes

Feel free to substitute any vegetables based on what you have on hand. This dish is great for meal prep and can be stored in the fridge for up to 3 days.
