Ingredients

1 lb fresh collard greens, washed and chopped

4 slices of bacon, chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup chicken broth (or vegetable broth)

1 tablespoon apple cider vinegar

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1 tablespoon olive oil (optional for extra flavor)

Instructions

Cook the Bacon: In a large skillet or pot, heat the chopped bacon over medium heat. Cook until crispy, about 5-7 minutes. Remove the bacon and set it aside, leaving the drippings in the pan.

Sauté the Aromatics: Add the diced onion to the skillet with the bacon drippings. Sauté for about 5 minutes until the onion becomes translucent. Add the minced garlic and red pepper flakes; cook for an additional 1-2 minutes until fragrant.

Add the Collard Greens: Gradually stir in the chopped collard greens. Cook for about 3-5 minutes until they start to wilt.

Pour in the Broth: Add the chicken broth and apple cider vinegar to the skillet. Season with salt and black pepper. Bring to a simmer, then cover the skillet and let it cook for 15-20 minutes, stirring occasionally until the greens are tender.

Final Touches: Once the collard greens are cooked, stir in the crispy bacon pieces. Adjust seasoning if needed.

Serve: Serve warm as a hearty side dish, drizzling with extra olive oil if desired, and enjoy the smoky, savory flavors!
