Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

1 cup uncooked white rice

2 cups seafood or chicken broth

1 can (10.5 oz) cream of mushroom soup

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

      Cook the Shrimp: Add the shrimp to the skillet. Season with paprika, thyme, salt, and pepper. Cook until the shrimp turn pink, about 2-3 minutes. Remove from heat.

        Mix the Casserole Filling: In a large mixing bowl, combine the uncooked rice, seafood broth, cream of mushroom soup, mixed vegetables, and the sautéed shrimp mixture. Stir until well combined.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes.

              Cheese Topping: Remove the foil, sprinkle the shredded cheddar cheese on top, and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.

                Serve: Remove the casserole from the oven, let it cool for a few minutes, then garnish with chopped parsley. Serve warm.
