Ingredients

  • 8 ounces fettuccine pasta uncooked
  • 1 pound boneless skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon Italian seasoning
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese plus extra for serving
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt to taste
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, season with Italian seasoning, salt, and pepper, and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.
  • Add the uncooked fettuccine pasta to the skillet, ensuring it's submerged in the cream. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened.
  • Once the pasta is cooked, add the grated Parmesan cheese and the cooked chicken back into the skillet. Stir well until the cheese is melted and the sauce is creamy. Adjust seasoning with salt and pepper if needed.
  • Serve hot, garnished with chopped parsley and additional Parmesan cheese if desired.

Notes

Tip 1: For extra flavor, add a pinch of nutmeg to the sauce.
Tip 2: This dish can be made ahead of time and reheated gently over low heat.
Variation: Substitute chicken with shrimp or add steamed broccoli for a veggie boost.
