Ingredients
  

1 cup quinoa, rinsed and drained

2 cups water or vegetable broth

2 medium apples, diced (preferably Granny Smith for tartness)

1/2 cup celery, finely chopped

1/2 cup walnuts, chopped and toasted

1/2 cup dried cranberries

1/4 cup red onion, finely diced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 1 lemon

2 tablespoons honey or maple syrup

3 tablespoons olive oil

Salt and pepper to taste

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

    Prepare the Dressing: In a small bowl, whisk together the lemon juice, honey (or maple syrup), olive oil, and a pinch of salt and pepper to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled quinoa, diced apples, celery, walnuts, dried cranberries, red onion, and parsley.

        Dress the Salad: Pour the dressing over the quinoa mixture. Gently toss to combine until all ingredients are evenly coated with the dressing.

          Add Feta (Optional): If using, sprinkle the crumbled feta cheese on top and gently toss again.

            Chill and Serve: Allow the salad to chill in the refrigerator for at least 30 minutes to let the flavors meld together. Serve cold or at room temperature.
