4 bone-in pork chops (1 inch thick)

1 cup fresh raspberries

1/2 cup balsamic vinegar

1/4 cup brown sugar

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

Fresh rosemary, for garnish (optional)

Instructions
 

Prepare the Marinade: In a small saucepan over medium heat, combine the balsamic vinegar, brown sugar, and Dijon mustard. Stir until the sugar dissolves and the mixture thickens slightly, about 5 minutes. Add the raspberries and gently mash them into the glaze. Remove from heat and set aside.

    Season the Pork Chops: Pat the pork chops dry with paper towels, then drizzle olive oil over them. Season both sides generously with salt and pepper.

      Sear the Chops: Heat a large skillet over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, or until they have a nice golden-brown crust and reach an internal temperature of 145°F (63°C).

        Glaze the Chops: Lower the heat to medium, and pour the raspberry balsamic glaze over the pork chops. Continue to cook for another 2-3 minutes, spooning the glaze over the chops, until they are fully coated and the glaze is heated through.

          Rest and Serve: Remove the pork chops from the skillet and let them rest for 5 minutes. Drizzle additional glaze over the top before serving. Garnish with fresh rosemary if desired.
