1 cup fresh raspberries (plus extra for garnish)

1/2 cup granulated sugar

1 cup water

1 teaspoon vanilla extract

2 cups soda water or sparkling water

1 cup heavy cream

Ice cubes

Fresh mint leaves for garnish (optional)

Make the Raspberry Syrup: In a small saucepan, combine the fresh raspberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally until the raspberries break down and the mixture thickens (about 8-10 minutes). Remove from heat and let it cool. Strain through a fine mesh sieve to discard the solids, leaving you with a smooth syrup. Stir in the vanilla extract and set aside.

    Prepare the Cream: In a medium bowl, whip the heavy cream with a hand mixer or whisk until soft peaks form. Be careful not to overwhip; you want a nice, pourable consistency.

      Assemble the Drinks: For each serving, fill a glass halfway with ice cubes. Pour about 2-3 tablespoons of the raspberry syrup over the ice. Slowly top with soda water, filling the glass about three-quarters full.

        Finish with Cream: Gently spoon a generous layer of whipped cream over the soda. You can also drizzle some extra raspberry syrup on top of the cream for added flavor.
