1 cup fresh raspberries (plus extra for garnish)

1 cup sugar

1 cup water

2 cups club soda (chilled)

1 tablespoon fresh lemon juice

Ice cubes

Mint leaves (for garnish)

Make the Raspberry Syrup: In a small saucepan over medium heat, combine the fresh raspberries, sugar, and water. Stir until the sugar dissolves, then bring the mixture to a gentle boil. Let it simmer for about 5-7 minutes, crushing the berries as they cook. Once the raspberries break down and the mixture thickens slightly, remove it from the heat and allow it to cool.

    Strain the Syrup: After the raspberry mixture has cooled, strain it through a fine mesh sieve or cheesecloth into a bowl or jar, discarding the solids. You'll be left with a vibrant raspberry syrup.

      Combine the Ingredients: In a tall glass filled with ice cubes, pour 1/4 cup of the raspberry syrup. Add the fresh lemon juice and stir gently.

        Add Club Soda: Slowly pour the chilled club soda into the glass, filling it to the top. Stir gently to combine, being careful not to lose the fizz.

          Garnish and Serve: Garnish your sparkling raspberry soda with a few fresh raspberries and a sprig of mint. Serve immediately with a straw.
