1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

1 teaspoon vanilla extract

1 cup fresh raspberries (or frozen, thawed)

For the Tangy Icing:

1 cup powdered sugar

2 tablespoons freshly squeezed lemon juice

1 tablespoon milk

Zest of 1/2 lemon

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, using an electric mixer, cream the softened butter and granulated sugar together until light and fluffy (about 3-5 minutes).

        Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Then, mix in the lemon zest, lemon juice, and vanilla extract until well combined.

          Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix! Gently fold in the raspberries with a spatula, being cautious not to break them apart too much.

            Bake the Loaf: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

              Cool the Loaf: Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                Prepare the Icing: In a small bowl, whisk together the powdered sugar, lemon juice, milk, and lemon zest until smooth. Adjust the consistency by adding more milk or powdered sugar as necessary.

                  Glaze the Loaf: Once the loaf is completely cooled, drizzle the tangy icing over the top. Allow the icing to set for a few minutes before slicing.
