Ingredients
  

1 cup fresh raspberries

8 oz dark chocolate (70% cocoa), chopped

1/2 cup heavy cream

2 tablespoons rose water

1 tablespoon unsalted butter

1/4 cup cocoa powder (for dusting)

1/4 cup crushed freeze-dried raspberries (for extra garnish)

Sea salt flakes (optional, for finishing)

Instructions
 

Prepare the Raspberry Puree:

    In a blender, puree the fresh raspberries until smooth. Strain through a fine mesh sieve to remove seeds, making about 1/4 cup of raspberry puree.

      Melt the Chocolate:

        Place the chopped dark chocolate in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until it starts to simmer. Pour the hot cream over the chocolate and let it sit for 5 minutes.

          Combine Ingredients:

            After 5 minutes, stir the chocolate and cream mixture until smooth. Add the raspberry puree, rose water, and unsalted butter. Stir until everything is well combined and glossy.

              Chill the Mixture:

                Cover the bowl with plastic wrap and refrigerate for about 2 hours or until the mixture is firm enough to scoop.

                  Form Truffles:

                    Once chilled, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter) from the chocolate mixture. Roll them quickly in your hands to shape and smooth them out.

                      Coat the Truffles:

                        Roll the formed truffles in cocoa powder, tapping off any excess. For added flair, you can also roll some in crushed freeze-dried raspberries for a colorful finish.

                          Chill Again:

                            Place the truffles on a parchment-lined tray and chill in the fridge for 30 minutes to firm up.

                              Serve:
