Ingredients
  

1 cup fresh raspberries (about 12 oz)

200g dark chocolate (70% cocoa or higher), chopped

1/2 cup heavy cream

1 teaspoon vanilla extract

1 tablespoon powdered sugar (optional, for sweetness)

1/2 cup cocoa powder (for rolling)

1/4 cup crushed freeze-dried raspberries (optional, for rolling)

Instructions
 

Prepare the Raspberry Puree: In a blender or food processor, combine the fresh raspberries and blend until smooth. Strain the puree through a fine-mesh sieve to remove the seeds, if desired. You should have about 1/4 cup of raspberry puree.

    Melt the Chocolate: In a heatproof bowl over a pot of simmering water (double boiler method), add the chopped dark chocolate. Stir gently until the chocolate is completely melted and smooth.

      Make the Ganache: In a small saucepan, heat the heavy cream until just boiling, then pour it over the melted chocolate. Let it sit for about 1 minute, then stir until the mixture is thick and glossy.

        Combine Flavors: Stir in the raspberry puree, vanilla extract, and optional powdered sugar. Mix until well combined.

          Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 1 to 2 hours, or until the ganache is firm enough to scoop.

            Form the Truffles: Once chilled, use a melon baller or small cookie scoop to form small balls (about 1 inch in diameter) from the ganache. Quickly roll them in your palms to make them smooth.

              Coat the Truffles: Prepare two bowls - one with cocoa powder and another with crushed freeze-dried raspberries. Roll half of the truffles in cocoa powder and the other half in the raspberry dust for added flavor and color.

                Chill Again: Place the coated truffles on a parchment-lined baking sheet. Refrigerate for another 30 minutes to set before serving.
