Ingredients

3 ripe bananas, mashed

1/3 cup melted unsalted butter

1 teaspoon baking soda

Pinch of salt

1 cup sugar (or brown sugar for a richer flavor)

1 large egg, beaten

1 teaspoon vanilla extract

1 and 1/2 cups all-purpose flour

1/2 teaspoon ground cinnamon

1/2 cup chocolate chips (optional)

1 cup vanilla ice cream (for frosting)

2 tablespoons milk (for frosting)

Whipped cream (for topping)

Rainbow sprinkles (for garnish)

Instructions

Prep the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Mix Wet Ingredients: In a large bowl, combine the melted butter and the mashed bananas. Stir until well mixed, and then add the beaten egg and vanilla extract. Mix until smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix. Gently fold in the sugar and chocolate chips if using.

Bake the Bread: Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.

Cool the Bread: Once baked, remove from the oven and let the bread cool in the pan for 10 minutes. Transfer it to a wire rack to cool completely.

Prepare the Frosting: In a bowl, mix the vanilla ice cream with milk until smooth and creamy. You can adjust the consistency by adding more milk if needed.

Frost the Bread: Once the banana bread is completely cool, spread the ice cream frosting generously over the top.

Add Toppings: Top with whipped cream and sprinkle with rainbow sprinkles for a festive touch.

Serve: Cut into slices and enjoy your Rebel Float Frosted Banana Bread warm or at room temperature!
