8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup Pecorino Romano cheese, grated

3 tbsp unsalted butter

3 tbsp all-purpose flour

3 cups whole milk

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper, to taste

1/2 cup panko breadcrumbs

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Cook Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Make Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until bubbly. Gradually whisk in the whole milk, ensuring no lumps form. Cook for about 5 minutes until thickened.

      Add Spices and Cheese: Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Reduce heat to low, then gradually add cheddar, mozzarella, and Pecorino Romano, stirring until melted and smooth.

        Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, mixing until the pasta is evenly coated.

          Prepare to Bake: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased baking dish.

            Create Topping: In a small bowl, combine panko breadcrumbs with a drizzle of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture evenly over the mac and cheese.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.
